Holiday Bakes: Cornflakes Cookies

The original name for this cookie is "Melting Moments".
It doesn't really melt in your mouth though, I mean, cornflakes can hardly melt in our mouths, can they? Its texture is more crunchy on the outside, soft and chewy on the inside. So I'm not quite sure why they're called melting moments. Cornflakes cookie is a much more suitable name and this cookie is a popular favorite back home during the holidays.

Ingredients (makes about 40 cookies)

2 sticks butter
1 cup sugar
1 2/3 cups all-purpose flour
1 egg yolk
1 tsp baking powder
1 tsp pure vanilla extract
1/2 cup cornflakes (crushed)

Method:
Preheat oven to 325˚F
1 Cream butter and sugar at medium speed in electric mixer until fluffy
2. Add egg yolk and vanilla; beat at low speed
3. Gently fold in flour and baking powder
3. Scoop with teaspoon and drop directly into crushed cornflakes, coating each ball evenly.
4. Bake for ~ 20 minutes
