Strawberry & Rosemary Scones

What a weird combo. Again, saw this on
Everyday Italian and just had to try the recipe. Our rosemary bushes were getting large as well and at least there's an excuse to go out to the backyard and do some trimming :-)
Simple basic scone recipe but the kicker is the rosemary. Just gives it refreshing, herby (is there such a word?) flavor. Instead of strawberry, I used good quality raspberry preserves from a local food store. I also tweaked the sugar glaze recipe; halved the portion and increased the ratio of lemon to sugar. For me, the lemon icing glaze is what made this entire scone recipe....you have the sweet flavor from the raspberry, the slightlsavory from the rosemary and the refreshing lemony burst from the glaze.
Heavenly! We brought those to D's friend, whose family was undergoing some tough emotional time, hoping that these heart-shaped scones could convey the warmth and concern we have for them.
Baking...."therapy" for me, blessing to others!!
