Two plus two plus Two

Sunday morning. It's been a long holiday weekend; a weekend overloaded with restaurant meals since we've been out and about the Bay Area. I'm craving for something less complex, something quick, something healthier and strangely, something on the sweet side for b'fast today.
Here's my two-plus-two-plus-two quickie which can be a b'fast, snack and for me, sometimes, a lunch item. I call this Apple-Oatmeal Crumblee (yes, with two Es and not with a Y).
Fruit Mixture
2 apples - skin peeled, cored and cubed to ~ 1/2" (I used Granny Smiths)
2 Tablespoons brown sugar
2 tablespoons orange juice
dash of salt
some raisins and walnuts (optional)
For the Crumblee Topping
2 Tablespoons all-purpose flour
2 Tablespoons butter, cubed.
2 - 4 Tablespoons rolled oats, depending on how much crunch you like
dash of ground cinnamon
Preheat oven to 400˚F
Mix all the ingredients for the fruit mixture in a bowl.
Allow to maserate for ~ 10-15 mins
Spoon mixture into ramekins
In a separate bowl, combine all the ingredients
Crumble topping over the fruit mixture
Optional: I topped mine with pre-made toasted honey-almonds
Bake in the oven for ~20 mins.
Great for breakfast or anytime snack!
